Buttermilk fried chicken thighs coated in a hot maple Nashville chicken seasoning sandwiched between two cheddar and chive waffles.
Yeasted Waffles:
-3 1/2 cups all purpose flour
-2 tsp kosher salt
-1 cup warm whole milk(90-100F)
-2 tsp active dry yeast
-2 eggs
-3 Tbsp granulated sugar
-5 Tbsp unsalted butter melted
-1/2 cup chopped chives
-1/2 cup shredded white cheddar
Method:
1. Combine yeast and warm milk in a liquid measuring cup. Stir together and set aside to let bloom for 5-7 minutes. Combine eggs and sugar in a mixing bowl then whisk together. While whisking stream in melted butter. Set aside. In a separate large mixing bowl combine flour and salt. Pour the yeast and milk mixture over the flour followed by the egg and butter mixture. Begin to mix with your hands and once a wet dough is formed begin to knead in the bowl for 5-7 minutes. It’ll be very sticky so just do your best to work the dough by pinching and folding it or slapping it against the side of the bowl. Transfer dough to a clean greased bowl. Cover and let proof until doubled in size.
2. Once proofed punch down the dough and turn out onto a work surface. Spread out the dough and top with shredded white cheddar and chopped chives. Fold and knead the toppings into the dough by hand for 1-2 minutes. Once incorporated divide dough into 8-10 pieces and let rest covered for 10 minutes before placing into a pre heated & greased waffle iron. Remove from the waffle iron and serve warm.
MAPLE HOT NASHVILLE CHICKEN SEASONING:
-1/4 cup cayenne pepper
-1 Tbsp kosher salt
-1 Tbsp smoked paprika
-1 Tbsp dark brown sugar
-1 Tbsp maple sugar
-2 tsp garlic powder
-2 tsp dried mustard powder
-1 1/2 cup hot fry oil
Method:
Combine all the spices, sugar and salt in a heat safe bowl. Carefully pour in the hot fry oil and whisk together. Immediately coat your fried chicken by either submerging it in the seasoned oil or brushing it on.
